This is a protein packed, super chocolatey recipe for all my fellow chocolate lovers out there. If you don’t add the chia seeds, it’s actually a really good chocolate pudding too!

  1. Mix coconut milk, protein powder, cocoa powder, and vanilla extract in a small bowl. I use a whisk to get it extra smooth. 

  1. Once smooth, add in chia seeds and 1/4 water. You may add extra water if you like your pudding thinner. I prefer mine super thick as in the picture.
  1. Top with cherries and refrigerate overnight. For best results, stir once after the first 30 mins – 1 hour to evenly distribute the chia seeds.

Notes

If you stop at step 1, you get an amazing high protein pudding. You could serve it with cool whip and a graham cracker crust.

What is dutch processed cocoa powder?

Dutch process cocoa powder is also called "alkalized" or "european style". This cocoa powder is a little less acidic than regular cocoa powder and more mellow. I think this flavor gives the recipe a richer taste almost like brownie batter, which I prefer.
