These chicken lettuce wraps are a delicious light meal or appetizer. The recipe comes together in just 15 minutes too! You only need 1 pan to cook your filling so dishes are a breeze. You could definitely use fresh garlic and ginger, however I used powdered to cut down on chopping and prep time. Cashews are a great complimentary flavor here and I love the added crunch and texture they add. Plus, they are full of healthy fats and up the protein a little bit.

Try these out for a quick weeknight meal. I recommend some rice on the side to create a balanced meal, but feel free to serve however you like!

  1. Heat a large skillet over medium heat. Add olive oil and when hot, add onion. Cook for 4-5 minutes until translucent.
  1. Next, add ground chicken, bell pepper, cabbage, or any other vegetables you want to add. After 5 minutes, or when chicken is fully browned, add in all other ingredients, except lime.
  1. Mix to combine well and cook for 1 minute. Turn off heat and transfer filling to a bowl. Fill your lettuce boats with as much filling as you want. Add a squeeze of lime on top if desired. Enjoy!

Notes

  • Add as much gochujang as desired. About 1/2 tbsp in this recipe gives a mild spice, so feel free to increase or decrease this amount. You can also use sriracha instead, however I would use less as it is spicier.
  • You need about 1 cup of vegetables for this recipe. Feel free to use mushrooms, carrots, or any other veggie. I like to use 1/2 cup cabbage and 1/2 cup green bell pepper personally. 
  • To round out your meal, I recommend cooking some rice for the side or to add into your wraps.
