🎃 It’s pumpkin season!! I had to create a pumpkin bread recipe that is super delicious, but with a healthy spin!

My recipe uses less butter, less sugar, and replaces regular all purpose flour with whole wheat and oat flours. This adds extra fiber - my favorite nutrient to talk about these days. Pumpkin adds some amazing nutrition as well, but you’ll have to read the post to find out more!

This easy and quick make ahead breakfast is packed with 30g protein, 11g fiber, and healthy fats (Omega 3s!). And I don’t use protein powder!! See recipe below!

Banana Overnight Oats (1 serving)
- 1/2 banana, mashed
- 1/2 cup old fashioned oats
- 1/2 cup plain greek yogurt
- 1-3 tsp maple syrup
- 1 tbsp flaxseeds
- 1 tbsp hemp seeds
- 1 tbsp chopped walnuts
- 1/2 tsp vanilla extract
- 1/2 cup soy milk
- 1 tbsp peanut butter
- refrigerate overnight!

I love chocolate in my oatmeal! The combination of peanut butter and chocolate is obviously a winner, but the crunch from the walnuts adds some amazing texture 😋 Feel free to scale this to however much oatmeal you want. My portion was on the small side since it wasn’t my full meal 😊

- Cooked oatmeal (I did 1/2 cup dry oats, cook with milk or water)
- Mix in 1 tsp brown sugar + 1 tsp maple syrup (or whatever sweetener you like!)
- Toppings:
- 1 tbsp peanut butter
- 1 tbsp hemp seeds
- 2 tbsp walnuts
- 1-2 tbsp chopped dark chocolate or chocolate chips

This Wonton Egg Drop Soup is really simple and quick for a weeknight dinner! By no means is this authentic, but it really hits the spot 😋

Recipe - serves 2-4
- Slice 5-6 green onions
- Heat up 1 tbsp oil in a pot and add in the whites of the green onions plus 4-6oz sliced mushrooms (any kind will do!)
- Cook on medium-high until veggies are browned, about 5-7 minutes
- Add 3 cups of low sodium chicken broth (or any broth of choice) and 1 tsp soy sauce
- Bring to a boil, then add wontons - I used 28 Trader Joe’s Chicken Cilantro Mini Wontons, about 9 oz.
- Let cook according to package directions.
- Make a cornstarch slurry with 1.5 tsp cornstarch and 2 tbsp cold water. Add into soup and mix well until thickened.
- Whisk 2-3 eggs and slowly add them into the soup, stirring constantly. If you like bigger ribbons, stir less.
- Its ready to serve! Top with sesame oil and green onion tops - enjoy!

I used farro this time but it would be equally delicious with rice! This pouch of salmon is such a fast and convenient source of protein, and it’s easy to dress up with seasonings like furikake, chili crunch, cilantro, and kewpie mayo. Beware of the heat in chili crunch 🥵 I can only tolerate a few drops but I love the flavor!

I challenged myself to make the first recipe that popped up on my Pinterest home feed, which turned out to be these spinach and feta stuffed mushrooms from @hungry.happens

I wanted to try a new recipe and wasn’t feeling very inspired, so this was a fun way to try something new! The stuffed mushrooms were delicious and easy to make. As I mentioned in the video, dill isn’t my favorite herb, so personally would use less next time because the flavor was a little overpowering to me. However I would recommend this recipe!
