Cottage Cheese Pancakes (High Protein!)
These easy cottage cheese pancakes are high in protein, but still have the classic pancakes taste and texture that you love!

Add all liquid ingredients to a blender: cottage cheese, eggs, milk, butter/oil, and maple syrup. Blend on high until smooth (30 seconds).

In a bowl, combine the liquid mixture with the all purpose flour and baking powder. Mix gently until just combined. Try not to overmix.

Heat a non stick or cast iron skillet on medium heat for a few minutes. Once preheated, melt a little butter or oil on the pan and add pancake batter using 1/4 cup of batter per pancake. Add any mixins you desire such as chocolate chips, blueberries, or walnuts. Adjust the size of your pancakes as desired.

Cook for about 3-5 minutes per side. Don’t flip until you see bubbles forming on the edges of the pancake. The second side cooks faster!

Take off the heat and enjoy! Serve with syrup, butter, peanut butter, banana, fruit compote, and/or jam as desired!
