Description

Delicious summer peaches are a sweet and tangy addition to a classic caprese salad. My recipe is quick, easy, and fresh. It's the perfect summer salad!

Ingredients
  • 2 medium peaches
  • 20 cherry tomatoes
  • 3 oz fresh mozzarella (1/2 cup) (I like the pearls)
  • 1 handful fresh basil leaves (chopped)
  • 2 tsp olive oil
  • 2 tsp balsamic glaze (not the plain vinegar)
  • sea salt (to taste)
Directions
  1. Slice or dice the peaches into bite sized pieces. Slice the cherry tomatoes in half (or fourths depending on the size). If you're using a regular sized ball of mozzarella, chop into bite sized pieces.

  2. Add peaches, tomatoes, mozzarella, basil, balsamic glaze, and olive oil to a bowl. Sprinkle over the sea salt to taste.

Notes

*This recipe stores well in the fridge for around 2 days. It will still be safe for a few more days, however the texture gets a little soft.

*Feel free to adjust the amount of each ingredient to your liking.
