Chocolate Cherry Chia Pudding

Description

This is a protein packed, super chocolatey recipe for all my fellow chocolate lovers out there. If you don’t add the chia seeds, it’s actually a really good chocolate pudding too!

Ingredients
  • 3 tbsp full fat coconut milk (from a can)
  • 1 scoop chocolate whey protein powder (I used Optimum Nutrition Gold Standard)
  • 1/2 tbsp cocoa powder (dutch process)
  • 1 tsp vanilla extract
  • 2 tbsp chia seeds
  • 1/4 cup water
  • 1/3 cup cherries (seeded and sliced)
Directions
  1. Mix coconut milk, protein powder, cocoa powder, and vanilla extract in a small bowl. I use a whisk to get it extra smooth. 

  2. Once smooth, add in chia seeds and 1/4 water. You may add extra water if you like your pudding thinner. I prefer mine super thick as in the picture.
  3. Top with cherries and refrigerate overnight. For best results, stir once after the first 30 mins – 1 hour to evenly distribute the chia seeds.
Notes

If you stop at step 1, you get an amazing high protein pudding. You could serve it with cool whip and a graham cracker crust.
